Crispy Brussel Sprouts With Soy-Ginger Vinaigrette

These Crispy Brussel Sprouts With Soy-Ginger Vinaigrette are crunchy, charred, sweet, spicy, and little tangy. These are super easy to make and will take your vegetable game to the next level. Topped with fried onions and salty peanuts, this brussel sprout salad is full of texture. These crispy brussel sprouts are perfect for Thanksgiving with their bold Thai flavors.

Ingredients

Soy-Ginger Vinaigrette

  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 2 cloves garlic grated
  • 1 tsp ginger grated
  • ¼ tsp chili flakes
  • 2 mint leaves chopped
  • 2 Thai basil leaves chopped

Fried Brussel Sprouts

  • 16 oz brussel sprouts chopped finely or shaved
  • vegetable oil
  • sea salt
  • pepper

Toppings

  • cup peanuts chopped
  • cup fried onions

Instructions

  • In a small bowl, mix together all of the ingredients for the soy-ginger vinaigrette. Let stand for 1 hour.
  • Line a large bowl with paper towels. This will be for the fried brussel sprouts.
  • In a heavy pan or cast iron skillet, pour in enough oil to fully coat the bottom of the pan. Turn the heat to medium high. Once the oil is very hot but not smoking, add enough brussel sprouts to fill the pan in a single layer. Do not overcrowd. Cook until the brussel sprouts are browned, about 5 minutes. Stir occasionally to turn. Repeat until all of the sprouts are fried, adding more oil if needed. Place the fried sprouts into the paper towel lined bowl to remove excess grease.
  • Remove the paper towels from the bowl. Season with salt and pepper. Add the vinaigrette to the sprouts and toss well. Top with peanuts and fried onions.

Notes

Chopped Brussel Sprouts: I use this chopper with the largest blade to cut my sprouts. You can also use the pre-washed and shaved sprouts. You can also cut or shave them yourself.
Fried Onions: I use the ones that come in the container pre-made on the shelf at the store.
