Season the Pork Chops: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup. Rub each pork chop with olive oil, then sprinkle evenly with the salt, mustard, garlic powder, onion powder, chili powder, smoked paprika, and oregano. Make sure to coat both sides of the pork chops thoroughly.
2 pounds pork chops, 1.5 inches thick, 1 Tablespoon olive oil, 1 1/2 teaspoons Morton kosher salt*, 1 teaspoon EACH dried mustard, garlic powder, onion powder, chili powder, smoked paprika, & oregano
Bake the Pork Chops: Optional - For extra caramelization, you can sear the pork chops in a hot skillet over medium-high heat for 2-3 minutes per side before baking. Arrange the seasoned pork chops in a single layer on the prepared baking sheet. Bake for 14-16 minutes or until the internal temperature of the pork chops reaches 145°F (63°C).
Make the Honey Glaze: While the pork chops are baking, prepare the glaze. In a small pot over medium heat, combine the honey, apple cider vinegar, soy sauce, and minced garlic. Stir continuously and cook until the mixture thickens slightly. The glaze will thicken as it cools. If it remains too thin after cooling, simply return it to the stove to reduce further. If it becomes too thick, you can thin it out by adding a bit of the pan drippings from the pork once it's finished cooking.
1/4 cup honey, 2 Tablespoons apple cider vinegar, 1 Tablespoons soy sauce, 6 cloves garlic, finely minced
Rest & Glaze: Once the pork chops are done, let them rest for 5 minutes to retain their juices. After resting, brush the pork chops generously with the honey glaze before serving.
