Blend all of the ingredients for the dressing in a small food processor or blender. Alternatively, grate or finely mince the garlic. Whisk all of the ingredients together.
1/4 cup good quality olive oil, 1-2 Tablespoons red wine vinegar*, 1 lemon, juiced, 1 clove garlic, 1/2 teaspoon EACH dried oregano, parsley, rosemary, & thyme, 1/4 teaspoon EACH ground mustard, Morton kosher salt, & freshly ground black pepper, 1/2 teaspoon honey, optional
In a large bowl, toss all of the salad ingredients with dressing to taste. Garnish with more toppings if desired.
