Pizza Tortilla Wrap

If you crave pizza but want to spend less than 30+ minutes crafting a homemade version (or ordering out!), this delicious Pizza Tortilla Wrap is the answer. Throwing this crispy tortilla pizza together only takes a few minutes and includes an irresistibly cheesy crust. The flavors are similar to regular pizza, though you'll find this option way less greasy!

Ingredients

  • cooking oil spray
  • 1 cup finely grated cheddar cheese, optional
  • 4 flour tortillas
  • 1/4 cup marinara sauce, plus more for serving
  • 2 Tablespoons basil pesto, optional
  • 6 slices mozzarella cheese, cut in half*
  • 20 slices pepperoni

Instructions

  • Heat a large nonstick skillet over medium-low heat. Grease with cooking oil spray. Add about 2 Tablespoons of the cheddar cheese directly to the pan.
  • Once the cheese has started to melt, press the tortilla into the cheese.
  • Spread about 1 Tablespoon of marinara sauce on half of the tortilla and about 1/2 Tablespoon of pesto on the other half of the tortilla. Layer 3 pieces of mozzarella and 5 slices of the pepperoni.
  • Using a spatula fold the tortilla in half. Fry on each side for 3-4 minutes or until golden and crispy.

Notes

  • Cheese: I prefer using multiple types of cheese to add more flavor to the recipe. If you only want to use mozzarella, you’ll need an additional amount to create the crispy cheese crust. Shredded cheese is best for the crust, as it melts more quickly than sliced cheese. It's also easier to control the amount when the cheese is shredded.
  • Basil Pesto: I prefer using basil pesto for this recipe, as it adds freshness and flavor to the pizza tortilla wraps. However, if you prefer a different flavor like spinach, kale, or red pepper pesto, those will all work well with this recipe. If you have extra time, a homemade pesto, is also a great way to boost the taste.
  • Grate fresh cheese: Pre-shredded cheese does not grate as well since it usually has additives to keep the pieces from sticking together. Grating fresh cheese ensures a fresh flavor and a beautiful crust on each pizza tortilla wrap.
  • Do not overstuff the wraps: Including more cheese and sauce may be tempting, but it will make the cooking process messier and the wraps more challenging to flip. However, if you accidentally go overboard with toppings, you can turn it into a double tortilla pizza to make it easier to flip.
  • Avoid making tortilla pizza in oven: If possible, avoid cooking the tortilla pizza in an oven, as checking the doneness is challenging. Since these tortilla pizza wraps cook quickly, it can be easy to burn them in the oven if you're not actively monitoring them.
