  • 2 Tablespoons chili powder
  • 1 Tablespoon granulated garlic
  • 1 Tablespoon onion powder
  • 1 Tablespoon ground cumin
  • 1 Tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon Morton kosher salt
  • OPTIONAL: ¼–½ teaspoon cayenne pepper, for extra spice

Instructions

  • In a small bowl, combine the chili powder, garlic powder, onion powder, cumin, smoked paprika, black pepper, salt, oregano, and cayenne (if using). Stir well until mixed. Use immediately or store in an airtight container for up to 6 months.

Notes

  • Kosher Salt: All of my recipes are tested with Morton kosher salt unless noted otherwise. It is the best salt for everyday cooking because of its size and flavor. If using table salt, the amount should be reduced. I highly recommend picking up some kosher next time you are at the store!
  • Double or Triple the Recipe: Have your seasoning ready for chili season! You need about 7 tablespoons (just shy of 1/2 cup) of the seasoning for a 1-pound chili recipe. Use more or less based on your preferences. Don’t forget to label it with the date. Homemade blends typically retain their flavor for about 6 months.
  • Use Fresh Spices: Check the expiration dates — old spices lose potency and can make your blend taste flat. Freshly opened chili powder and cumin make a huge difference.
  • Adjust for Your Recipes: If you’re using this blend for soups, tacos, or marinades, start with 2 Tablespoons and add more to taste. Chili powder brands vary in intensity.
  • Spicier Blend: Add 1 teaspoon cayenne pepper or ½ teaspoon crushed red pepper flakes for extra heat.
  • Mild & Kid-Friendly: Use sweet paprika instead of smoked and skip the cayenne entirely for a gentler, well-rounded flavor.
