These Savory Roasted Sweet Potatoes are crispy, cheesy, and packed with flavor! The perfect side dish for any occasion, they are roasted with garlic, fresh rosemary, and a blend of herbs, then topped with a layer of nutty Parmigiano Reggiano for an irresistible cheesy crust. They’re easy to prepare and make a great complement to just about any main dish.

Ingredients

  • 2 1/4 pounds sweet potatoes, peeled & sliced 1/2-inch thick
  • 2 Tablespoons olive oil
  • 2 Tablespoon unsalted butter
  • 2 teaspoons Morton kosher salt*
  • 6 cloves garlic, minced finely
  • 1 heaping Tablespoon fresh chopped rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • fresh cracked black pepper
  • 3 ounces (1 cup) parmigiano reggiano, grated*

Instructions

  • Toss: Preheat the oven to 400°F. In a large bowl, toss the sweet potatoes with olive oil, melted butter, kosher salt, garlic, rosemary, thyme, sage, and freshly cracked black pepper. Make sure the sweet potato slices are well coated.

  • Sprinkle Parmesan: Line a baking sheet with parchment paper, then sprinkle the parmesan directly onto the parchment to create a cheesy base for the sweet potatoes.
    3 ounces (1 cup) parmigiano reggiano, grated*
  • Arrange Sweet Potatoes: Arrange the sweet potato slices on the parchment in a single layer, pressing each slice gently into the Parmesan to help it adhere and create a crispy, cheesy crust.
  • Bake: Roast for 25-30 minutes. For an extra golden finish, broil for the last 1-2 minutes, keeping a close eye on them to prevent burning.

Notes

  • Kosher Salt: All of my recipes are tested with Morton kosher salt unless noted otherwise. It is the best salt for everyday cooking because of its size and flavor. If using table salt, the amount should be reduced. I highly recommend picking up some kosher next time you are at the store!
  • Parmigiano Reggiano: This cheese adds a salty, nutty, and umami-rich flavor. Regular Parmesan, Pecorino Romano, or Asiago can be used as substitutes. Grating the cheese fresh from a block gives the best texture and flavor.
  • Even Slicing: Try to slice the sweet potatoes as evenly as possible (about 1/2-inch thick) to ensure they cook at the same rate.
  • Don’t Skip the Parchment: The parchment paper prevents the cheese from sticking to the baking sheet and makes it easy to achieve that perfect cheesy crust.
  • Watch the Broiler: The broiler can go from golden to burned quickly, so keep a close eye during the last couple of minutes.
