Ingredients & Substitutions
- Sweet Potatoes: Look for medium-sized sweet potatoes for even cooking. Yams can also be used, but they are slightly starchier. You can also substitute with butternut squash or carrots for a similar flavor profile.
- Olive Oil: Use extra virgin olive oil for the best flavor, but any neutral oil like avocado oil or vegetable oil will work well.
- Unsalted Butter: Unsalted butter gives you more control over the seasoning. If using salted butter, reduce the added salt slightly.
- Kosher Salt: All of my recipes are tested with Morton kosher salt unless noted otherwise. It is the best salt for everyday cooking because of its size and flavor. If using table salt, the amount should be reduced. I highly recommend picking up some kosher next time you are at the store!
- Garlic: Freshly minced garlic gives the best flavor, but you can use garlic powder in a pinch. Substitute with about 1/2 teaspoon of garlic powder if needed.
- Rosemary: Fresh rosemary adds a wonderful piney aroma. You can use dried rosemary if fresh is unavailable, but reduce the amount by half as dried herbs are more concentrated.
- Thyme: Dried thyme is convenient, but fresh thyme will provide a more vibrant flavor. If using fresh thyme, double the amount.
- Sage: Dried sage adds an earthy, slightly peppery taste. If you have fresh sage, finely chop it and double the amount for a stronger flavor.
- Black Pepper: Freshly cracked black pepper is preferred for its bold flavor. Pre-ground black pepper can be used if needed, but reduce the amount slightly.
- Parmigiano Reggiano: This cheese adds a salty, nutty, and umami-rich flavor. Regular Parmesan cheese, Pecorino Romano, or Asiago can be used as substitutes. Grating the cheese fresh from a block gives the best texture and flavor.

Quick Tip From Bri
The Parmesan crust may darken quickly under the broiler, so keep a close eye on it.
- Toss: Preheat the oven to 400°F. In a large bowl, toss the sweet potatoes with olive oil, melted butter, kosher salt, garlic, rosemary, thyme, sage, and freshly cracked black pepper. Make sure the sweet potato slices are well coated.
- Sprinkle Parmesan: Line a baking sheet with parchment paper, then sprinkle the parmesan directly onto the parchment to create a cheesy base for the sweet potatoes.
- Arrange Sweet Potatoes: Arrange the sweet potato slices on the parchment in a single layer, pressing each slice gently into the Parmesan to help it adhere and create a crispy, cheesy crust.
- Bake: Roast for 25-30 minutes. For an extra golden finish, broil for the last 1-2 minutes, keeping a close eye on them to prevent burning.

Sweet potatoes are a delicious side dish. Here are some main dish recipes I would pair them with:
- Honey Glazed Pork Chops: The ultimate combination of sweet, smoky, and savory.

- Baked Chicken Cutlets: These cutlets come out of the oven golden and crunchy, with minimal effort.

Expert Tips
- Even Slicing: Try to slice the sweet potatoes as evenly as possible (about 1/2-inch thick) to ensure they cook at the same rate.
- Don’t Skip the Parchment: The parchment paper prevents the cheese from sticking to the baking sheet and makes it easy to achieve that perfect cheesy crust.
- Watch the Broiler: The broiler can go from golden to burned quickly, so keep a close eye during the last couple of minutes.
Additions & Variations
- Spicy Kick: Add a pinch of red pepper flakes or cayenne pepper to the seasoning mix.
- Maple Herb: Drizzle a bit of maple syrup over the sweet potatoes before roasting for a sweet-savory flavor.
- Cheesy Twist: Mix in some shredded mozzarella or Gruyère for an extra cheesy topping.
