Ingredients & Substitutions

Overhead image of ingredients needed to make garlic butter steak bites.
  • Avocado Oil: Great for high-heat searing. Substitute with another high smoke point oil like canola or vegetable oil.
  • Steak: Ribeye, New York strip, or sirloin work best. Ribeye is the richest and most tender, while sirloin is leaner and more affordable.
  • Kosher Salt: All of my recipes are tested with Morton kosher salt unless noted otherwise. It is the best salt for everyday cooking because of its size and flavor. If using table salt, the amount should be reduced. I highly recommend picking up some kosher next time you are at the store!
  • Fresh Cracked Black Pepper: Adds bite and balances the richness of the butter.
  • Unsalted Butter: Adds richness and flavor to the sauce. You can use salted butter—just reduce added salt slightly.
  • Garlic: Use freshly minced for the boldest flavor.
  • Worcestershire Sauce: Adds depth, umami, and a subtle tang.
  • Dijon Mustard: Helps emulsify the sauce and adds a zesty note.
  • Dried Thyme: A little goes a long way. You can sub with Italian seasoning or a pinch of rosemary.
  • Fresh Chopped Parsley (Optional): Adds color and freshness to finish the dish.

Quick Tip From Bri

Make sure the skillet is hot before adding the steak—this helps develop that golden crust without overcooking the inside.

  1. Sear the Steak Bites: Heat the avocado oil in a large cast iron or stainless steel skillet over medium-high heat. Pat the steak pieces dry with paper towels and season with the kosher salt and plenty of fresh cracked black pepper. Working in batches if needed, sear the steak for 1–2 minutes per side, or until deeply browned but still juicy inside. Transfer to a plate and set aside.
  2. Sauté the Garlic: Reduce the heat to medium low. If there are any black or burnt bits in the pan, carefully wipe them out with a paper towel held by tongs. Add the butter and let it melt, then stir in the minced garlic. Sauté for 30–60 seconds, or until fragrant and just starting to turn golden.
  3. Build the Sauce: Stir in the worcestershire, dijon mustard, and dried thyme. Let the mixture bubble for 30 seconds, stirring to combine and lift up any remaining browned bits from the pan.
  4. Finish the Dish: Return the seared steak bites (and any juices) to the skillet. Toss everything together for 1–2 minutes, just until the steak is coated and warmed through. Remove from heat and finish with fresh parsley. Serve immediately.

Recipe Serving Suggestions

Garlic butter steak bites are versatile; you can serve them with just about anything! These recipes are my personal favorite sides:

  • Yellow Rice: This rice is buttery, fluffy, and loaded with savory flavor. With just a few pantry staples, you can make a restaurant-quality side in under 30 minutes.
  • Twice-Baked Mashed Potatoes: These potatoes are creamy, cheesy, and loaded with crispy bacon and garlic. The potato peels add a fun and crispy garnish, making this a perfect side dish.
  • Glazed Stovetop Carrots: These delicious honey-glazed carrots are sweet, garlicky, cheesy, and zesty.
  • Yukon Gold Mashed Potatoes: This is one of my favorite ways to make potatoes. The dish is so simple and easy
  • Roasted Potatoes and Asparagus: Roasted potatoes and asparagus is a filling yet nutritious side dish that complements many protein entrees.
  • Crispy Glazed Brussels Sprouts: They’re made with a delicious balsamic and honey glaze and crisped to perfection in the oven.

Expert Tips

  • Don’t Overcrowd the Pan: Sear the steak bites in batches to get a beautiful golden crust instead of steaming the meat.
  • Use Room Temperature Steak: Let your steak sit out for 15–20 minutes before cooking so it sears evenly.
  • Wipe the Pan if Needed: Burnt bits can make the sauce taste bitter, so give the skillet a quick wipe before adding the butter.

Most Common Mistakes

  • Skipping the Pat Dry Step: If the steak is wet, it won’t sear properly and will steam instead.
  • Overcooking the Garlic: Garlic can go from golden to burnt fast. Keep the heat low and watch it closely.

Additions & Variations

  • Make It Spicy: Add red pepper flakes or a splash of hot sauce to the sauce for heat.
  • Add Mushrooms: Sauté sliced mushrooms after the steak and toss them in with the garlic butter sauce.
