    This Peach Moscow Mule is the perfect summer drink. It is light, refreshing, full of homemade peach syrup and finished with fresh peaches. The peach simple syrup takes a bit to cook but is so worth the wait. And you will have plenty leftover, in case you need another mule!

    • Peach Syrup: If you are short on time, you can use store bought peach syrup. I like Torani’s syrups the best. 
    • Peaches: I usually use frozen peach slices to keep it easy, but fresh will work as well.
    • Ginger Beer: I prefer to use Fever Tree’s ginger beer. 
    • Vodka: Use peach flavored vodka for more of intense sweet peach flavor. I prefer plain but some really enjoy peach vodka for this recipe. You could also use peach vodka and omit the peach syrup all together for a subtle peach flavor.

    Instructions

    before you start . . .

    • Make the peach syrup. Be sure to make the syrup ahead of time so it has time to cool in the refrigerator. If you are in a hurry, you can also chill it quicker in the freezer.
    • Slice garnishes. I like to load up on the fresh peaches, lime wedges, and mint leaves.

    Step 1: In a small saucepan, combine the peaches and about a ¼ cup of water. Bring to a boil. Reduce heat to medium and cook for 30-45 minutes, stirring frequently, until the peaches are tender. Add more water as needed.

    Step 2: Run the peaches through a metal fine mesh strainer. Use a spoon to press them through until there are no more chunks.

    NOTE - You should be able to mash the peaches with the back of your spoon. 

    Step 3: In the same sauce pan, heat ½ cup of water over medium high heat. The water should not come to a boil but be steaming. Add in the sugar and stir until it dissolves. Stir in the peach puree. Once combined, remove from heat immediately.

    Step 4: In a small pitcher, combine the ginger beer, vodka, lime juice, 1 Tablespoon of the peach syrup, and stir. Serve over ice. Add more syrup if desired.

    TIP -  If you do not have a mesh strainer, use a fork or small food processor. 

    Expert Tips & Recipe Notes

    • Keep a close eye on the peaches. The peaches need to cook for a while. Stir them frequently and be sure there is enough moisture to keep them from sticking. If they are looking dry, but are still not soft, add more water. Once they are soft, cook off most of the liquid.
    • Use a fine mesh strainer. This will make the smoothest peach puree. The peaches might seem like they are too thick to go through it, but if you keep pressing them with pressure eventually they will go through. You can also use a fork or food processor in a pinch. 
    • Substitute store bought peach syrup or peach vodka. Everyone has a different sweetness preference for their cocktails. There are a couple of alternative options for this recipe. Use store bought peach syrup and plain vodka, or use no syrup and peach vodka. Both are great ways to give the mule peach flavor. You can also use both syrup and peach vodka for a more intense peach flavor. 
    • Add ice right before serving. No one wants a watered down drink so be sure to add ice right before serving. 
    • If you want to double the recipe, don’t double the syrup ingredients. There is plenty of syrup for multiple drinks.

    FAQs

    How do you store leftover syrup?

    The syrup will only keep in a jar or airtight in the fridge for 4 days. I highly recommend freezing it in ice cube trays. Once the cubes are frozen, pop them into a freezer bag. Use as needed for making cocktails in the future.

    Can you make this ahead of time?

    Definitely. You want to make the peach syrup ahead of time so that it has time to cool. However, I recommend mixing the cocktail right before serving.

    How much alcohol is in a mule?

    About 1 shot or 2 ounces of vodka per drink. The ginger beer itself contains no alcohol.

    What is a moscow mule?

    A moscow mule is a cocktail made of ginger beer, lime juice and vodka. It is typically served in a copper mug. It is a light and not too sweet cocktail.

    What is ginger beer and what does it taste like?

    Ginger beer is like a sweet ginger soda. It is carbonated and has a warm and slightly spicy ginger flavor.

    Is ginger beer alcoholic?

    Typically no or it has a very small alcohol content. Fever Tree ginger beer is non alcoholic.

    Can you make this a mocktail?

    Yes. There is so much flavor from the peaches, ginger beer, and lime that this would make a delicious mocktail. Just leave out the vodka and you are good to go!
